Happy Campers Holiday Stuffing Recipe!

Well, it’s that time of year again! Whether you stuff your turkey, or you stuff yourself, we hope these recipes should put a smile on your face and in your belly! Wherever you are, we wish you the happiest (and tastiest) of holidays! 🙂

How to Make Happy Campers Gluten-Free Stuffing

1.  Cut slices of your favorite flavor(s) of Happy Campers bread into ½-1″ pieces.
2.  Spread the bread cubes in a single layer on a large rimmed baking sheet.
3.  Bake the bread cubes at 400ºF on the center oven rack until nice and toasty, 12-15 minutes. (45 minutes at 225º also works.)
TIP: For the tastiest stuffing, let your Happy Campers bread dry overnight so it can absorb all the other delicious flavors that make it stuffing; toasting the bread also boosts flavor. (Remember to prepare  this at least a day before!)

You can’t go wrong with this classic! So tasty with savory sage and olive oil that you’ll want to stuff yourself with it!

  • 1 loaf’s worth of Classy Slice or Hemp Hemp Hooray stuffing (or a mix of the two!)
  • 4 Tbsp. butter or olive oil
  • 1 medium onion, chopped
  • 3 celery stalks, chopped
  • 1 tsp. rosemary, dried
  • 2 tsp. ground sage
  • 2 tsp. poultry seasoning
  • 1½-2 cups turkey giblet broth or vegetable stock
  • 2 Tbsp. fresh parsley, chopped
  • Salt and pepper, to taste

Preheat oven to 350° F. Place Happy Campers Gluten-Free stuffing mix in a large mixing bowl. Melt butter or oil in a large skillet. Sauté onions, celery, and ½ tsp. salt for 5 minutes on medium heat. Add poultry seasoning and other herbs to bread cubes and gently stir onion mixture to combine well. Slowly pour broth or stock over the bread cubes folding everything carefully so that the bread cubes do not break apart too much. Add a little at a time just to moisten well. Taste and add salt, pepper, or more herbs to desired flavor.
Remember: these tasty flavors will intensify a bit when cooked, so don’t over-salt or -season! Scoop uncooked stuffing into a medium casserole dish and bake uncovered for 40 minutes or until nice and toasty on top. Serves 6-8. Now start eating, and enjoy! Happy holidays! 🙂

For those who love to give their tastebuds an adventure! Enjoy buckwheat’s robust richness with pecans and mushrooms!

Happy Campers, Coming to a Store Near You!

Hello, Happy Campers!
Summer has finally turned into Fall, which means it’s time to…run through colorful leaves…go apple-picking…drink hot, spiced cider…and make tomato soup and Happy Campers grilled-cheese sandwiches! Thanks to all of you, we’ve had a great 2013 so far. You enjoyed our bread, so we made more. But then you ate it all up, and ever since then, we’ve been baking our buns off! And we’ve learned a few things:

  • So many of you love to love our bread, and want to be able to get it wherever you might be.
  • If all your great store-suggestions are any indication, we need to get it to more of you!
  • You are all immensely wonderful people who care about healthiness and happiness.
  • Fresh, hot toast is fresh hot magical easy to make disappear, deliciously.

Happy Campers @ PSU Farmers' MarketWe’ve been overjoyed to hear all the kind words form all of you, whether it’s been in person at the Farmers’ Market, here online, or even by word of mouth. It’s been a good year for gluten-free friends in Portland, Oregon. But what about to those of you hungry, non-gluten folks in other states?—Idaho, Maryland, Hawaii, Washington, New York, Texas, Utah…. We know you want our bread, too!
So. We’re excited to announce that, thanks to you, we’re continuing to expand a little further! It’ll be only a few stores at a time—baby steps!—but we’re always working on getting into more places. We appreciate all of your wonderful suggestions about where to deliver next, as well as your in-store comment cards. They definitely work, so if Happy Campers isn’t to be found on your favorite store’s shelf, kindly ask them to get it! It’s the number one way for them to get our bread soonest. And let us know here or on Facebook where we should deliver our bread next! We hope for you to see Happy Campers on shelves everywhere, soon.
In the meantime, eat a slice. Heck, eat four! Sandwiches, toast, dip-strips, we’re happy with whatever makes you happy. If you feel good about it, spread the word about us to your gluten-free friends, and then feel good about feeling good! (Notice a trend here? 🙂 ) If they enjoy our bread as much as you do, then we all get to have more smiles. We’re making as much bread as we currently can and will continue to do so if you keep snatching it off the shelves!

Community: Helping Little Happy Campers

Sometimes, the greatest feeling in the world is to see a smile spread over the face of a child. We feel that happiness can be just as nourishing as the food we eat. It’s not just something we love to say—it’s something we truly believe.
Recently we were introduced to the Royal Family Kids camps here in Portland. Every Summer they hold a camp for foster kids from Multnomah County, and their purpose is to provide all the children a safe space to just ‘be kids’ and have a truly happy, positive experience. They are staffed solely by volunteers who wonderfully and generously give their time and energy. So, when we heard about this local camp whose primary purpose was cultivating happiness and wellness—we wanted to show all our support to those happy little campers who might benefit from our gluten-free goodness!

You know the kinds of days where you wake up and think, “wouldn’t it be great if the world had more mediocre gluten-free bread?” …Yeah, neither do we. But that’s okay, because we’re fortunate enough to wake up and bake our bread for you!
As you know, we introduced our all-new organic seed-flour breads a few months ago, and the response has been wonderfully staggering! We couldn’t be happier with how the year has panned out so far. Thanks to so many requests from all of you, we’ve been getting our new bread to more and more stores, so keep asking your local food market to stock our loaves! Of course, this means we’ve been busier baking than we’ve ever been, and we just wanted to remind you that it’s all because of you! 🙂
You have all been the most wonderful people! Gosh, we’re grateful.
If you’ve ordered a box of loaves from afar, or came by in person to say “hi” at a farmers’ market…if you aren’t gluten-intolerant or -sensitive, but you love it anyway…if you’re just now rediscovering bread again after realizing that gluten is not the best of your friends. If you’re big, if you’re small—you love our bread, we love you all!
One of the best rewards of getting to do what we do (besides the endless snack opportunities) is the sheer fun. It’s a happiness that doesn’t stop at the edges of our smiles. It comes from knowing that we’re baking the healthiest, tastiest, most enjoyable bread we can; and most importantly, that you love it. We love hearing your stories and seeing your smiles at all of our Farmers’ Market tents. We grin at all your fun banter online. It sounds cheesy (mmm, cheese) to say, but without you, we wouldn’t be here! As long as you keep supporting our yummy bread, you can bet we’ll keep on baking it. (The ciiircle of liiife!)
Simply put: we wouldn’t be ‘Happy Campers’ if it weren’t for all of you happy campers. So—thank you, thank you, thank you! From the bottom of our hearts (and tummies).
And don’t forget to spread the good word about us! We’ve got some good ideas in the, er, oven. This is just the beginning! We’re just getting started…. 😉

Happy (Campers) Fourth of July!

Hey, Happy Campers!
As you may have noticed, things have gotten a little quiet around here. It’s been our intention to spend more time getting things updated, but we’ve been baking up a storm here at the base camp! It seems that you all happen to love our new bread, so we’re doing our best to keep the loaves and buns coming out of the ovens! We couldn’t be happier how our new recipe turned out, so it’s fun to bake plenty of them for you! 🙂
But whoa—how did the Fourth of July sneak up on us so fast?! We don’t know about you, but the Fourth usually means a number of things. Feeling the sun, smelling the sweet Summer air…spending some quality time with family and friends, chuckling at a few of their hilariously bad (or would that be badly hilarious?) jokes…hearing far-off shouts of Independence Day glee…watching kids, barely restrained by their parents, run around and all but actually yell, “FREEEEDOM!” And, of course, the beautiful and brilliant booms of fireworks!
Summer is clearly here, and it seems to be smiling just as much as we are.
So—we won’t keep you! If you’ve already busted out that barbecue, go out to your favorite local store and grab a pack of fresh Wild Buns for some delicious, gluten-free Fourth o’ July grillin’!

It's Always a New Year!

It’s that time of year again! Once the alluring newness of January has faded away, it’s much easier to be bogged down by the daily grind. Keeping up those New Year’s resolutions seems exhausting and increasingly impossible. (More than a third of New Year’s resolution-makers break them before February even begins!)

“Lose all excess weight!”
“Exercise frequently!”
“Drink enough water every day!”
“Consistently eat more fruit and vegetables!”
“Quit smoking!”

Those all sound simple, don’t they? They’re good and healthy resolutions…but they can seem drastically big! Many people are quickly discouraged when they don’t see immediate progress when pursuing such goals. What’s worse, if those goals eventually do seem too drastic, they’ll almost always lead to failure. It’s certainly important to keep those goals in focus—but that’s not what this is really about. This is about something simpler. Something better.
Regardless of whatever “big” resolutions you might have made at the start of 2013, don’t underestimate all the small ones that could make just as big a difference. Living healthily doesn’t need to be taxing—in fact, it should be quite the opposite!
At Happy Campers, we generally live by just three rules:

  • Rule #1: Be healthily happy.
  • Rule #2: See #1.
  • Rule #3: Um….

…See where we’re going with this?
A lot of people seem to forget that good food and exercise, as healthful as they are, aren’t the sole contributors to being healthy. Sometimes resolving to do the smaller things helps just as much. The next time you give someone a hug, hold them for a second or two longer than usual. A smile, even longer. Smiling isn’t just something we do because we’re happy; it actually perpetuates happiness! Do something new, something fresh! Or simply do something familiar, but that makes you happy. If you’re tired, get some good rest, and then go for a hike with a friend! Enjoy some fresh toast! Climb a tree! Tell someone you love them. Read a book, outside in the sun! Ride a moose bareback through the forest! Let yourself be inspired so much in one day that by its end, you fall asleep and soon wake up ready to do it all over again.
Our specialty as Happy Campers might be making some of the tastiest, most nutritious, gluten-free bread we can, but what we’re really after is something much bigger than that. We’re very proud of the bread we bake, and as much as we love it, our resolution is to make it even better for anyone and everyone who’d like a bite (or several!).
Eat well, of course. But most importantly, don’t forget to be well. Remember to nurture your life, not just your body!
So. Even though we’re now past January: Happy 2013! It’s never too late to make a resolution—big or small—it’s always a new year! The good things in the upcoming months have only just begun….
Now, stop reading this and go do something that makes you happy!
